The beans are sourced from Gaura Estate on Sumba Island, Indonesia, a single-estate plantation with a dedicated team committed to producing exceptional fine flavour cacao. Cultivated within a biodiverse agroforestry system, the cacao benefits from the island’s unique climate and mineral-rich soils.
Carefully fermented and sun-dried on-site, this cacao develops a vibrant and layered flavour profile. Expect notes of grapefruit, dried apricot, toasted bread, and deep chocolate tones, balanced by a warm and lingering finish.
Light roasting preserves the cacao’s natural aromatics while enhancing sweetness, depth, and clarity.
